Golden Caesar Salad



*Note-I always recommend organic ingredients*

Serves 4-6 people

1 head of romaine lettuce
2 tbsp of romano or parmesan cheese

Dressing
3.5 tbsp of olive oil
1 tbsp of white vinegar
0.5 tbsp of fresh lemon juice (I use more because I love my dressing tart)
0.5 tsp of sea salt
1 tsp of fresh parsley
1/8 tsp of dijon mustard
1/2 - 1 clove of garlic depending on desire and size of clove
1 egg yolk
dash of worcestershire sauce
dash of tobasco sauce

Wisk the above ingredients together in a small bowl and pour over salad
Mix well and top with cheese

This dressing is best made several hours before as it improves the flavour!
Put unused dressing in the fridge and dispose of after 24 hours because of the raw egg.
If you prefer a creamy caesar salad, omit the egg yolk and add in a couple tbsp of mayonnaise.
