Brown Rice Cakes with Roasted Veggies


I am currently doing a detox and am only allowed certain grains (brown rice, quinoa and millet). So I came up with this delicious lunch that I thought I would share with you!

Ingredients

Unsalted Brown Rice Cakes
Guacamole
Red Pepper
Zucchini
Red Onion

Cut up the red pepper, onion and zucchini (drizzled with a little grapeseed oil) and place in oven for 20 min @ 350 F.
Spread the guacamole on rice cakes and top with the roasted veggies.
Enjoy with a side of celery and cashew butter!
